Yes, I feel that Codename: Sailor V should adapted into an animated form. What I would like to see happen in the Codename: Sailor V anime is the reveal of Boss' identity. I'd also like the anime clear up any plot holes.

I would definitely like a Codename Sailor V anime. My dream would that it would be a prequel to the 90s anime however if not that would be fine as well I would just like to see the characters animated and especially see what the villains look like in color. We know what Pandora looks like in color but that is about it.

I would certainly watch it. I would be fine with a prequel to the 90's show, Crystal, or even a solo continuity. I'd be fine with any of these. The manga gave us plenty of material and I'm sure they could come with some very nice extra stories as well. The identity of Boss would be nice (even if it contradicted my personal theory lol) as well as watching Minako grow as a soldier.

The only downside is that the Manga is short, and therefore should be an OVA, but you know extra material will be added by show developers. When Sailor moon was on, Naoko Takeuchi actually wanted to turn sailor v into an Anime, it can still happen right now.

The manga is only 16 chapters and considering that they were mostly episodic like most of the 90s anime, a one-cour series (12-13 episodes) could actually work.

I wouldn't mind, but Vee's storylines are so small and inconsequential that you could just get away with making 5-to-10 minute shorts running alongside Sailor Moon's adventures. Only the final Vee story has any importance, so that could be made into a full episode.
