Both Mamoru and Ami aspire to become doctors, and since it would be incredibly boring if they both just wound up becoming general practitioners working at the local hospital, I feel like they need to specialize in different fields of medicine.
Based on his backstory, I feel like Mamoru should either become a pediatrician or a neurologist specializing in memory and sleep disorders.
As for Ami, I swear the anime (maybe it was just the DiC dub?) mentioned at some point that her mother was a pediatrician, and since Ami/Amy wants to follow in her mother's footsteps, that means she'd go into pediatrics as well. For some reason, I think Ami would make a really good therapist, so I'd like to see her go into psychiatry instead. I could also see her just going into research and working on developing vaccines and curing cancer and all that good stuff.
And then, of course, there's also Hotaru, who wants to become a nurse. But I think Chibiusa would 100% lead her down the horse girl path and Hotaru would actually become a horse doctor.

might serve best as a Pediatrician (Child Doctor), although she could also do other Areas as well; Mamoru , due to his own Childhood Experience, could possibly specialize on Brain Surgery, or better, people who suffered similar cerebral/psychological Traumata.
